The stacked genitive chain "the wine of the passion of her immorality" is hard to follow when read aloud. Rendering θυμοῦ adjectivally ("maddening wine") keeps the sense of intoxicating passion/fury while giving the clause a cleaner spoken rhythm. The existing wording is a legitimate literal rendering, so it remains a valid alternative.
